Premium Nebbiolo grapes were sourced from Young, in the Hilltops region of NSW (elevation 550m). This northern Italian variety is famously picky about where it grown, though seems to thrive in the cool climate and red granite soil of the Hilltops region. Wild yeast fermentation with a long maceration on skins and aged in seasoned French and Hungarian oak puncheons. Bright varietal fruit characteristics of dark cherries and rose petals are complemented by a rustic, earthy Italian feel and fine lingering tannins.
