Carolyn’s Cabernet is grown in the red granite soils of the cool climate region of Hilltops NSW. Winemaking involved wild fermentation with a long maceration on skins and aging for 14 months in premium French oak barriques. Structured and complex with great length and aging potential.

Bright, clear crimson-purple; extended maceration (2 weeks post-ferment maceration, 35 days on skins) has magnified the impact of the cabernet tannins, but there is some cassis fruit within the parcel. May breakthrough (the alcohol alone would suggest total ripeness), but I think the odds are against it. 89 points (Bronze) – James Halliday
