Head Chef Russell Chinn has shared with you a dressing that is currently featured in our Chargrilled Baby Chicken menu item.
It’s also delicious over potatoes or as a salad dressing, so we wanted to share it with you. Enjoy!


20gm Fennel Seeds – Toasted

1 Lemon

2 Cloves of Garlic

150ml Olive Oil

4 Thyme Sprigs picked

20ml Water

Salt & Pepper to taste



Place fennel seeds, garlic, thyme, lemon juice and zest in a blender with water.

Blend on high until fine, turn down to a slower speed, drizzle in olive oil and season with salt & pepper.

Allow to sit for a day while it infuses.
