Our Drinks List features wine produced by the Cupitt family here at Washburton Farm as well as other wines we consider to be excellent examples of their variety and region and a good match for our local produce-driven menu. Our list also includes a great selection of local craft beers made on site in the Cupitt Craft Brewers Microbrewery, and some of our favourite cocktails.

Our Drinks List features wine and beer produced by the Cupitt family here at Washburton Farm, Ulladulla. The winemaking duties have been handed over from Rosie Cupitt to her sons
Wally and Tom, however they still work as a team in deciding the style of wines
with the fruit we receive each vintage. Whilst every vintage is unique the
essence of each variety is carried over each year.

We grow Sauvignon and Semillon and source fruit from growers in the Hilltops, Wamboin, Tumbarumba, Orange and the Southern Highlands to make unique, single vineyard wines.

Our philosophy has remained the same since we started making wine in 2007. We embrace old world methods with new world technology, using minimal intervention with each batch of grapes to achieve the best wine. Our aim is to produce handmade wines that directly reflect the region in which they are grown. Simple methods are always best and we ensure we have the best oak to balance the fruit and alcohol.

It is our view, that nothing lifts a good plate of food as much as well
matched wine alongside it. We offer wine pairing suggestions on the menu for this reason; to enhance the dining experience.

The Cupitt Craft Brewers Microbrewery was established in 2014 producing a range of popular ales, seasonal beers, experimental styles and a traditional English ale on the Handpump. Try our Tasting paddle to sample the range or ask your server for a recommendation.

Moving with the Seasons, we are pleased to offer a range of ‘Garden to Glass’ cocktails made with Kitchen Garden syrups and herbal infusions as well as the classics. Our cocktails provide the perfect introduction to the Cupitt Experience. We also provide the ideal finish with more than 40 whiskies from Scotland and around the world plus a range of grappa, cognac and armagnac available.

Many of the Cupitt wines on the list are available for sale in the Cellar Door. You can ask your waiter about our Cellar Door price list or pop into the Cellar Door for a complimentary wine tasting. Ask about Cupitt’s VIP Wine Club; which gives you a

Kolsch 9 (4.8% ABV, 23 IBU)
Pale Straw in colour, with delicate fruity aromas and a smooth crisp mouth feel. Soft and malty on the palate with a refreshing bitterness to finish. A very clean German ale.

Mosaic Session Ale 9 (4.4% ABV, 25 IBU)
This single hop ale features the distinctive Mosaic hop. Passionfruit and papaya aromas jump out of the glass, from an easy going package that is restrained in bitterness.

Cupitt Pale Ale 9 (5.2% ABV, 45 IBU)
Pale Ale at the amber end of the spectrum packed full of US Cascade Hops & a nice dose of Crystal Malts mixed with the Golden Promise Base Malt.

Cupitt Mild 9 (Hand Pump) (4.4% ABV, 19 IBU)
This traditional ale presents with a mousse like head and a silky, creamy mouthfeel thanks to its serving method. Aromas of toffee dominate from the heavy handed use of caramelised malts, with dried fruit like esters apparent, produced by the British ale yeast used.

Cupitt Barrel Aged Imperial Stout 9 – Limited Release – (500ml bottle) (8% ABV, 80 IBU)
A rich and indulgent stout that has been aged in former Shiraz barrels for 11 months. Cocoa, raisin and sandalwood aromas draw you in to a complex beer with texture and very light tannins from the oak. Sip and savour.

Arneis Co-Ferment 9 (7.6% ABV, 11 IBU)
One day into the fermentation with a Belgian ale yeast we added 30% Arneis grape juice. Initial aromatics are of esters and spices associated with Belgian yeast, followed by Arneis characters of melon, pear and almond. A fruit-filled body and subtle acidity entice you back.

Tempranillo Co- Ferment 9 (7.7% ABV, 11 IBU)
To create this wild union of beer and wine we added partially fermented Tempranillo (30%) to the wort and let it continue fermentation with native grape yeast. Tempranillo adds rich colour and subtle tannins, complemented by raspberry, cherry, dark chocolate and hints of spice.

2017 Cupitt Sauvignon Blanc (King Valley, VIC) 38
Grown in the cool climate region of King Valley this Sauvignon Blanc is vibrant and fresh, displaying tropical fruit with a clean, crisp finish.

2017 Cupitt Alphonse Sauvignon (Milton, NSW) 48
Inspired by Alphonse Mellot (Sancerre, France) this Sauvignon displays citrus and gooseberry, with a creaminess from barrel fermentation and extended lees contact.

2017 Cupitt Pinot Grigio (King Valley, VIC) 42
Made in the classic Italian style, this wine is best consumed young to fully enjoy its vibrant fruit characters. The nose displays the fresh aromas of juicy pear and green apple. A crisp, light, savoury palate, kept in balance by lively acidity.

2017 Cupitt Riesling (Hilltops, NSW) 45
A dry style of Riesling offering fresh citrus characters on the palate with classic lemon acidity and length.

2017 Cupitt ‘The Pointer’ Chardonnay (Tumbarumba, NSW) 54
The grapes grown in the cool climate region of Tumbarumba were pressed as whole bunches. Fermentation and maturation in premium French oak barrels on lees has helped produce a refined Chardonnay. Aromas of mandarin and orange peel are followed by peach, white nectarine, complemented by a luscious, creamy palate and a slight toastiness from well integrated oak.

2017 Cupitt ‘Provenance’ Chardonnay (Wamboin, Canberra District, NSW) 78
The grapes grown in the cool climate region of Tumbarumba were pressed as whole bunches. Fermentation and maturation in premium French oak barrels on lees has helped produce a refined Chardonnay. Aromas of mandarin and orange peel are followed by peach, white nectarine, complemented by a luscious, creamy palate and a slight toastiness from well-integrated oak.

2017 Cupitt Viognier (Hilltops, NSW) 48
A favourite of the Cupitt family, this Viognier is handpicked from a single vineyard, pressed as whole bunches, then fermented and matured in seasoned French oak puncheons. The luscious wine displays floral aromatics and a generous palate of apricot, peach, and mandarins

2017 Cupitt ‘The Pointer’ Pinot Noir Tumbarumba, NSW 58
Grown in the cool climate region of Tumbarumba and matured in premium French oak hogsheads, this is an elegant wine displaying layers of dark cherry and plum, followed by soft tannins and a lingering finish.

2016 Cupitt Pinot Noir Wamboin, Canberra District, NSW 65
Grown at 850m above sea level in the cool climate of Wamboin on the eastern edge of the Canberra District wine region. The mineral-rich volcanic sandstone and shale soils of low fertility produce a wine with a pure expression of classic varietal fruit characters that is complimented by a great natural acidity and firm, lingering tannins. Handpicked and fermented with 35% whole bunches, and aged in 30% new French oak Hogsheads for 12 months.

2017 Cupitt Barbera Hilltops, NSW 54
This Northern Italian variety has found a new home in Young, NSW. The red granite soil is perfect for accentuating the lush flavours of red currant and black cherry. A hint of spice and soft silky tannins make this an interesting and deeply satisfying wine.

2017 Cupitt Nebbiolo Hilltops, NSW 64
James Halliday consistently appreciates this wine giving the previous 3 vintages 95 points. Vibrant red rose and black earth on the nose followed by earthy tannins and a delicate velvet like finish.

2016 Cupitt ‘Slaughterhouse Red’ Cabernet Merlot Hilltops, NSW 46
A blend of Cabernet Sauvignon and Merlot from carefully selected barrels of our 2016 vintages. Bursting with flavours of ripe red berry fruit, black cherries and spice underpinned by firm tannins which soften through to the finish.

2016 Cupitt Carolyn’s Cabernet Sauvignon Hilltops, NSW 52
Named after Griff Cupitt’s late sister, the fruit for this was grown in the cool climate of the Hilltops region. It underwent a wild fermentation with a long maceration on skins and aged for 14 months in premium French oak barriques giving the wine a rich complex fruit character and lingering finish.

2016 Cupitt Shiraz Hilltops, NSW 40
This is a medium bodied Shiraz has appealing red berry characters, and hints of dark fruit that balance well with the subtle vanilla and light roasted flavours from the oak.

2016 Cupitt Dusty Dog Shiraz Hilltops, NSW 75
Fragrant and refined in a style that the Hilltops Region has become known for. Co-fermentation with 2% whole bunched Viognier and matured in premium French oak hogsheads, aromatic perfume with delicate mid-palate, spicy finish and soft tannin.

2015 Cupitt Pinot Noir Wamboin, Canberra District, NSW 78
The cool climate of Wamboin and the scrubby soils of sandy loam and shale are a perfect fit for the temperamental grape. Our Pinot is hand picked and fermented as 50% whole bunches, followed by a long maceration on skins. This time on skins- of up to one month- allows the tannins to soften and integrate before we drain the wine and gently press the grape skins. The wine is conditioned in beautiful French oak barrels before it is bottled, 12 months later.

2017 Cupitt Botrytis Viognier Hilltops, NSW 42
A delicious sweet wine offering peach, nectarine, apricot and candied citrus characters with undertones of ginger. The palate is balanced with a long, luscious, lingering finish.

2016 Longview ‘Epitome’ Late Harvest Riesling Adelaide Hills, SA 45
The wine has a golden straw colour; the aroma has slight notes of golden delicious apple and molasses. This comes together with an underlying bouquet of orange blossom. A refreshing palate of peach, ripe citrus and dried apricots is followed by a wonderfully clean finish that will compliment most desserts and especially cheese.

2013 Rieslingfreak No. 7 Fortified Riesling Clare Valley, SA 48
This wine is one of a kind. Made in a ‘white port’ style, the No.7 is dark yellow in colour, flavours of sultanas, caramel and butterscotch, orange peel and dried fruits.

2015 Cupitt ‘Le Gourmand’ Fortified Pinot Gris Southern Highlands, NSW 42
A ‘gourmand’ is someone who takes great pleasure in eating and drinking. Nostalgic aromas of Christmas cake spices carry over to the palate giving flavours of caramelised orange, marmalade and raisins. Heavenly! The perfect indulgent finish.
