Our Drinks List features wine produced by the Cupitt family here at Washburton Farm as well as other wines we consider to be excellent examples of their variety and region and a good match for our local produce-driven menu. Our list also includes a great selection of local craft beers made on site in the Cupitt Craft Brewers Microbrewery, and some of our favourite cocktails.

Our Drinks List features wine and beer produced by the Cupitt family here at Washburton Farm, Ulladulla. The winemaking duties have been handed over from Rosie Cupitt to her sons
Wally and Tom, however they still work as a team in deciding the style of wines
with the fruit we receive each vintage. Whilst every vintage is unique the
essence of each variety is carried over each year.

We grow Sauvignon and Semillon and source fruit from growers in the Hilltops, Wamboin, Tumbarumba, Orange and the Southern Highlands to make unique, single vineyard wines.

Our philosophy has remained the same since we started making wine in 2007. We embrace old world methods with new world technology, using minimal intervention with each batch of grapes to achieve the best wine. Our aim is to produce handmade wines that directly reflect the region in which they are grown. Simple methods are always best and we ensure we have the best oak to balance the fruit and alcohol.

It is our view, that nothing lifts a good plate of food as much as well
matched wine alongside it. We offer wine pairing suggestions on the menu for this reason; to enhance the dining experience.

The Cupitt Craft Brewers Microbrewery was established in 2014 producing a range of popular ales, seasonal beers, experimental styles and a traditional English ale on the Handpump. Try our Tasting paddle to sample the range or ask your server for a recommendation.

Moving with the Seasons, we are pleased to offer a range of ‘Garden to Glass’ cocktails made with Kitchen Garden syrups and herbal infusions as well as the classics. Our cocktails provide the perfect introduction to the Cupitt Experience. We also provide the ideal finish with more than 40 whiskies from Scotland and around the world plus a range of grappa, cognac and armagnac available.

Many of the Cupitt wines on the list are available for sale in the Cellar Door. You can ask your waiter about our Cellar Door price list or pop into the Cellar Door for a complimentary wine tasting. Ask about Cupitt’s VIP Wine Club; which gives you a

Milton Pilsner  4.8% ABV,  23 IBU 9

Griff Cupitt works tirelessly behind the scenes here at Cupitt’s. We brew this beer for him – it’s his tipple of choice after a days work. Fermented cold with a German lager yeast, we add new-world hops for a subtle twist. Extended maturation leads to a beer that ticks all the boxes

Mosaic Session Ale  3.5% ABV, 25 IBU 9

This single hop ale features the distinctive Mosaic hop. Passionfruit and papaya aromas jump out of the glass, from an easy going package that is restrained in bitterness.

Cupitt Pale Ale  5.2% ABV, 45 IBU 9

Pale Ale at the amber end of the spectrum packed full of US Cascade Hops & a nice dose of Crystal Malts mixed with the Golden Promise Base Malt.

India Pale Ale   6.5% ABV, 60 IBU 10

Classic West Coast style India Pale Ale with plenty of pine, citrus and tropical notes.  A balanced malt backbone with a bold, bitter finish.

Cupitt Hibiscus Wit   5.0% ABV, 12 IBU 9

Blush pink, this wheat beer gets its unique character from the addition of hibiscus flowers and Indian coriander. With a light acidity, this is one proven thirst quencher.

Hop Harvest Ale – 2019 (Hand Pump) (4.6% ABV, 20 IBU) 

This year’s Hop Harvest Ale features Chinook and Fuggles hops grown by Ryefield hops in Bemboka, NSW. The malt bill is also NSW grown, malted by Voyager out of Grifith. We brewed this the day after the hops were picked, and added most of them into the whirlpool. This year we decided to serve it via cask/handpump. The flavour is quite distinct and features earthy, grassy hop flavours with hints of citrus. A biscuit malt base compliments the hop character.

2018 Cupitt Sauvignon Blanc, Orange , NSW 40
The grapes grown in the cool climate region of Orange NSW, this Sauvignon Blanc is bursting with passion and Kiwifruit flavours and has a clean finish. A wonderfully balanced wine with chalky minerality and great length.
2018 Cupitt Alphonse Sauvignon,  Milton, NSW 48
Inspired by Alphonse Mellot this Sauvignon displays citrus and gooseberry,  with a creaminess from barrel fermentation and extended lees contact.
2018 Cupitt ‘Mia Bella’ Arneis,   Orange, NSW 46
This wine is aromatic and vibrant. With lifted floral aromas, our arneis is fruit concentrated and balanced with flavors of pear, peach and lychee with nutty overtones. This lively wine dances in your mouth with zesty citrus fruit.
2018 Cupitt Riesling  Hilltops, NSW 45
Intensely aromatic, with lifted notes of meyer lemon and orange blossom. The palate is generous with bright mouthwatering acidity. There are notes of pineapple and nectarine. A vibrant wine with great length.
2018 Cupitt ‘Provenance’ Pinot Gris  Wamboin, Canberra District, NSW 50
Grown at 850m elevation in the cool climate of Wamboin on the eastern edge of  the Canberra district wine region. A multi layered wine displaying pear, apple and white nectarine, spice aromatics and a textual palate with saline like minerality and acrisp dry finish.
2018 Cupitt MV Marsanne Viognier, Multi Regional Orange and Hilltops, NSW 54
The Viognier complements the Marsanne providing glorious aromatics of jasmine and orange blossom and distinctive fruit characters of peach, fresh quince and apricot. The Marsanne provides structure and tension with flavours of lemon and lime and nuances of cracked walnut.
2018 Viognier, Hilltops, NSW 48
The selected fruit is handpicked from a single vineyard and pressed as whole bunches. The fruit went through wild yeast fermentation and secondary malolactic fermentation in barrel and remained on lees until it was bottled in Spring. The wine leaps out of the glass with beautiful floral aromas and spice. The palate is long and inviting, with integrated fruit and oak supporting vibrant fruit flavours of nashi pear, apricot and peach and earthy spices.
2017 Cupitt ‘Provenance’ Chardonnay,  Wamboin, Canberra District, NSW 70
These Chardonnay grapes are grown in shaly sandstone soils at an elevation of 850m in Wamboin on the eastern edge of the Canberra district wine region. This cool climate wine was made using whole bunch pressing, fermentation and maturation in premium French oak barrels, and some lees stirring. The combination of nature and craftsmanship has produced a mineral and complex Chardonnay with notes of fig and spice, a creamy palate and a long elegant finish.

Rosie’s famous Rosé is made from Pinot Noir grapes inspired by the Rosé made in Provence this wine displays fresh strawberries with a textural savoury palate and leaves a crisp, dry finish

2018 Cupitt ‘The Pointer’ Pinot Noir,  Tumbarumba, NSW60
Grown in the cool climate region of Tumbarumba and matured in premium French oak hogsheads, this is an elegant wine displaying layers of dark cherry and plum, followed by soft tannins and a lingering finish.
2017 Cupitt Barbera, Hilltops, NSW54
This Northern Italian variety has found a new home in Young, NSW. The red granite soil is perfect for accentuating the lush flavours of red currant and black cherry. A hint of spice and soft silky tannins make this an interesting and deeply satisfying wine.
2017 Cupitt Nebbiolo, Hilltops, NSW64
James Halliday consistently appreciates this wine giving the previous 3 vintages a Gold rating. Vibrant red rose and black earth on the nose followed by earthy tannins and a delicate velvet like finish.
2017 Cupitt Merlot, Hilltops, NSW58
Fermentation with wild yeasts and maturation in premium French Oak, has produced a Merlot displaying plum, blackcurrant, clove and liquorice with well integrated oak and Bordeaux style tannins.
2016 Cupitt Carolyn’s Cabernet Sauvignon, Hilltops, NSW 5252
Named after Griff Cupitt’s late sister, the fruit for this was grown in the cool climate of the Hilltops region.  It underwent a wild fermentation with a long maceration on skins and aged for 14 months in premium French oak Barriques giving the wine a rich complex fruit character and lingering finish.
2017 Slaughterhouse Red (Cabernet/Merlot), Hilltops, NSW 4646
A blend of Cabernet Sauvignon and Merlot taken from careful barrel selections of our 2016 vintage. Ripe red berries mix with black cherries and spice. Firm tannins soften through to the finish.
2017 Cupitt Shiraz,  Hilltops, NSW40
This is a medium bodied Shiraz has appealing red berry characters, and hints of dark fruit that balance well with the subtle vanilla and light roasted flavours from the oak.
2016 Cupitt Dusty Dog Shiraz,  Hilltops, NSW75
Fragrant and refined in a style that the Hilltops Region has become known for. Co-fermentation with 2% whole bunched Viognier and matured in premium French oak hogsheads, aromatic perfume with delicate mid palate, spicy finish and soft tannin.

2015 Cupitt Pinot Noir Wamboin, Canberra District, NSW 82
The cool climate of Wamboin and the scrubby soils of sandy loam and shale are a perfect fit for the temperamental grape. Our Pinot is hand picked and fermented as 50% whole bunches, followed by a long maceration on skins. This time on skins – of up to one month – allows the tannins to soften and integrate before we drain and gently press the grape skins. The wine is conditioned in beautiful French oak barrels before it is bottled, 12 months later.
2014 Carolyn’s Cabernet, Hilltops 75
This wine shows rich dark currant fruit with aromas of autumn leaves that flow nicely onto the palate supported by cedar wood spices and soft velvety tannins.

A ‘gourmand’ is someone who takes great pleasure in eating and drinking. Nostalgic aromas of Christmas cake spices carry over to the palate giving flavours of caramelised orange, marmalade and raisins. Heavenly! The perfect indulgent finish.
